Catering is the F&B growth engine. Profit per dollar is working harder to stay still.
Official food-caterer sales are about 18% above 2019. Restaurants are flat to down. The money sits in kitchen utilisation, mix, and contract quality, not in another weekday buffet SKU.
Prefer scaled kitchens with a corporate or institutional book. Do not buy the 2024 rebound as a margin story.
Sales can still grow at a mid-single to low-double-digit pace through 2028. Industry net is likely sideways or down unless prices, mix, and weekday utilisation improve. PWM steps through 2028 are already known.

How to read the market
Singapore does not publish a single official catering market size in dollars. The reliable public record is the Department of Statistics Food & Beverage Services Index for Food Caterers (SSIC 56200), plus company accounts, tourism and MICE figures, and labour rules. This page uses those first. Commercial reports that put Singapore catering in the hundreds of billions of US dollars are not credible. Official F&B sales run at about S$1 billion a month.

Event catering, transport and airline catering, and contracted meals cooked in a central kitchen and served off-site. This is the DOS Food Caterers series.
Layer 2
On-site contract foodservice
Staff canteens, school and hospital kitchens. Often classified with food courts and canteens (SSIC 56122), not as caterers.
Layer 3
Restaurant and hotel banquets
A growing overlap. Dine-in operators add off-site catering to offset weak walk-ins. Same kitchen, different margin math.
What the numbers do not say
A cautious reading of the index, F&B totals, and category weights puts official Food Caterers around S$1 billion in the mid-2020s, not several billion. Nexdigm’s public teaser of USD 3.9 billion by 2030 is an upper-bound commercial estimate for a wide definition. Reject figures such as USD 265 billion.

Simplified volume-operator P&L
A well-run kitchen can hold net in the high single digits. A sub-scale, price-led kitchen often runs at 0–5% or a loss once owner wages are counted.

Tight liquidity. Corporate and government clients pay on 30–60 days. A cancelled gala hits cash immediately.
Assets are mostly debt-financed. High ROE of 38.9% is leverage, not fat cash margins.
The field
Fragmented in events. Concentrated in aviation and large contracts. About 1,371 live companies list Food Caterers as a principal activity. Non-retail food establishments rose from 1,852 in 2019 to 2,667 in 2025.

Neo Group
Largest multi-brand catering group (Neo Garden, Orange Clove, Deli Hub, Chilli Manis, Lavish Dine). Nearly 90% of catering inputs made in-house. Orange Clove ranked Singapore’s No. 1 corporate caterer on 2024 value sales by Euromonitor, serving more than 830,000 guests that year. Listed 2012, delisted 2021. Long-term turnover ambition of S$1 billion, delayed by Covid.
Aviation
SATS Ltd
Food Solutions S$1.19bn (FY2024) to S$1.44bn (FY2025) to S$1.49bn (FY2026). Group FY2026: revenue S$6.35bn, EBIT margin 8.6%, PATMI S$285 million. Scale and hub density are the moat. Changi handled nearly 70 million passenger movements in 2025.
On-site contracts
Compass and Sodexo
Compass Singapore (Eurest, Chartwells): 50+ sites, 40+ clients, 8 million meals a year. Embedded kitchens, monthly billing, low churn when service holds. Sodexo is visible in hospital patient-meal service. Lower margin, higher quality of earnings.
Volume buffet
Select, independents
Select Group (Stamford, halal; Select Catering) competes head-on in volume buffet. Independents include Rasel, Chilli Api, Shiok Kitchen, Grain, Purple Sage, and hotel banqueting. Listed floors around S$16 per head keep price pressure on anyone without a factory.
Barriers
High at the top, low at the bottom
Top: central-kitchen capacity, MUIS certification, SFA track record, corporate vendor onboarding, airside access. Bottom: low, which is why listed per-pax prices stay under pressure. SFA still notes most remaining outbreak cases involve catered food.
Outlook to 2028
Base case
Food-caterer sales grow at a mid-single to low-double-digit annual rate in nominal terms: slower than 2024–25’s rebound, faster than restaurants. STB’s more cautious 2026 tourism forecast (17–18 million visitors, S$31–32.5bn receipts) and ACAPS’s mid-2025 softening comment argue against another year of 18% growth.

Where earnings hold up
For an operator
The money is in kitchen utilisation and mix. Institutional contracts are the ballast. Corporate events are the torque. Weddings are the showcase. Below a certain order volume, the PWM and SFA stack keep net profit negligible.
For a buyer
Prefer groups with owned manufacturing, a corporate or institutional book, halal capability, and a clean SFA record. Look at cash conversion and contract indexation, not the 2024–25 top line.
What would break it
A sharp corporate-budget recession. A major catering-linked food-poisoning cluster. A prolonged drop in Changi traffic. PWM-plus-levy increases that SMEs cannot pass on. None of these is the base case as of September 2026.

Not used for market size
Deep Market Insights “USD 265.29 billion” Singapore catering market, and recycled figures in the thousands of billions of USD. Those conflict with official F&B sales of about S$12 billion a year and with listed-company revenue (SATS Food Solutions S$1.49 billion in FY2026).
